SSA Japanese Sake Introductory Professional Certificate Course

Introduction

Introduce the history and culture of sake, understanding the production process of sake, sake tasting and food pairing, and traditional wine tasting and serving etiquette. Through 5 hours of interactive learning, students will acquire professional sake knowledge. Upon completion of the course (without an exam), students will receive an international certificate from the Sake Sommelier Association (SSA).

CIVB Professional Certificate Course

Introduction

Through 5 hours of interactive teaching, students will gain an understanding of the diversity of Bordeaux wines: vineyard distribution, terroir, climate, soil, and main grape varieties, as well as recognizing Bordeaux wine labels. Explores winemaking processes and aging techniques, learns professional wine terminology, tasting skills, and pairing methods for red wine with food (cheese). After completing the 5-hour course (without an exam), students will receive a certificate from the Bordeaux Wine Institute (CIVB).

Adolphus Foo

Adolphus Foo has over 30 years of experience in the wine industry and is a certified sommelier and lecturer with SSA. He has held positions such as sommelier and wine director in the hospitality industry and is currently the president of the Macao Sommelier Association.

He has managed wine programs at MGM Macau, Raffles Singapore, and several other well-known hotels. He has received multiple wine awards, including the 'Grand Award' from Wine Spectator magazine, 'World's Best Wine' from Wine magazine, and 'Three Stars for the World's Best Wine List' from Fine Wine magazine, as well as the highest honor award at the 1996 Australian Wine Awards and the finalist award at the 1997 Singapore Sopexa Best Sommelier Competition.

Adolphus Foo is also a judge for several international wine and spirits competitions and the Best Sommelier competitions. He is the first person in Macau to be recognized as a lecturer by the Bordeaux Wine Institute (I'Ecole du Vin de Bordeaux).
